Fast forward a couple years, and we’re thankful, blessed and obsessed to be back on Oahu for our third extended visit in as much time.
Shoulders falling into place, we’ve already reconnected with the old neighborhood and are stepping back into the lessons we swear we’ll carry home with us each time.
Slowing down (wayyy down);
Loving ourselves whole-y;
And finding comfort in the unknown.
All things we typically try to embody, but it’s not until we return to our home away from home that we realize we may have accidentally forgotten them.
So in honor of the islands, the weekend, and one of my other favorite things: GRILLING - I give you this suuuper fun recipe from Chef Sheldon Simeon’s must have book, Cook Real Hawai’i.
The perfect camp food, the filling for these Flying Saucer Sandwiches can (and should) be made ahead and then finished with your Toas-Tite griddle over the camp fire, grill or otherwise.
But don’t worry, these sandwiches are fabulous for a beach day picnic or enjoyed at home, too.
Here’s what you’ll need:
sliced white bread
American cheese slices
1 lb ground beef
1 onion, diced
1/2 cup celery, diced
1/2 cup carrot, diced
3 cloves garlic, minced
2 tbsp tomato paste
1/2 can cream of mushroom soup
1 tbsp chili powder
1 tsp cumin
butter
extra virgin olive oil
salt
pepper
Here’s what you’ll need to do:
In a pan over medium heat, sauté onion, carrot, celery and garlic in a drizzle of extra virgin olive oil until soft. Add ground beef to the pan and cook until brown, seasoning with a generous pinch of salt and pepper. Throw in tomato paste, cream of mushroom soup, chili powder and cumin. Stir to incorporate, and season with more salt and pepper to taste. Set aside.
Butter a slice of bread and place it (buttered-side down) on one half of your Toas-Tite griddle.
Pro Tip: If your slice of bread isn’t large enough to cover the Toas-Tite griddle, use a rolling pin to roll the bread out and make it slightly larger.
Place a slice of American cheese on the bread slice, then add your filling to the center, leaving about a half inch border around it. Top filling with a second slice of buttered bread (buttered-side up). Close the Toas-Tite griddle, ensuring the sandwich is centered and the edges of the griddle are sealed properly. Remove any excess bread that may be sticking out of the Toas-Tite griddle.
Place the closed Toas-Tite on your grill or campfire over a medium-ish heat. Cook for a couple minutes on each side, being careful not to burn your sandwich, until the bread is golden and toasted.
CAREFULLY open the Toas-Tite (it will be HOT), and use a spatula to help remove the sandwich. Allow sandwich to cool for a couple minutes (the inside of your sandwich will also be HOTTT) before cutting in half to enjoy!
